Zipylyna’s Tummy-Soothing Supper

Zipylyna eats this when she’s winding down after a long day of duck-whispering and brain work. 🦆
🍽 Ingredients (for 2 servings):
- 150 g sweet potato, peeled and cubed
- 1 small carrot, sliced
- 1 small broccoli, in florets
- 100–120 g salmon fillet or 100 g tempeh
- 100 g cooked brown rice or quinoa
- 1 tbsp pumpkin seeds
- Fresh parsley or cilantro
🥣 For the tahini dressing:
- 1.5 tbsp tahini
- 1 tsp lemon juice
- 1 tsp maple syrup or honey
- 1 tsp tamari or soy sauce
- Pinch of cumin
- Optional: warm water to thin
🌀 Instructions:
- Roast sweet potato at 200 °C (392 °F) for about 25 minutes.
- Steam broccoli and carrot until just tender.
- Sear the salmon in a pan or marinate and sauté the tempeh.
- Assemble everything in a bowl. Drizzle with dressing, top with pumpkin seeds and herbs.
- Spoon in hand – slow down, breathe, enjoy. No phone. No stress. Just bowl.
